Rip’s Homemade Meatloaf
A 50-year-old family recipe helps make this savory entrée one of the most popular on the menu at Rips County Inn.
“We pride ourselves on our fresh, homemade dishes,” says Rips General Manager, Matthew Gilstein. “We offer ‘comfort’ with a ‘kick!’” Indeed, your mouth will get a kick out of this homespun and hearty meatloaf with its blend of locally sourced pork, veal, and beef. To spice things up, Rips adds red pepper, onion, a flavorful tomato sauce, a splash of Worcestershire sauce, eggs, just the right measure of breadcrumbs, and an herb and spice combo that Gilstein says they have been perfecting for years.
As a regular menu item this dish is served with a generous side of, what else, but potatoes whipped up with a combo of sweet creamery butter and heavy cream. Need a beverage suggestion? Gilstein recommends a glass of their Liberty School Cabernet Sauvignon or a whistle wetting brew from their selection of craft beers.
